This season, we’re bottling spring itself with lilac-infused drink recipes perfect for adding a whimsical touch to your next game day or night.

Below you’ll find the know-how you need to craft your own lilac simple syrup, along with two delightful ways to use it: a crisp Lilac Gin Fizz for your 21+ adventurers, and a sparkling Lilac Lemonade for a zero proof/non-alcoholic option that still feels like a rare tavern specialty.
🌸 Lilac Simple Syrup
4 cups lilac florets*
2 cups white sugar
2 cups filtered water
Gently separate the individual lilac florets from the stems and rinse florets in a metal mesh strainer.
Bring sugar and water to a boil in a medium saucepan. Once boiling, remove from heat, stir in florets, cover, and allow to cool in the pan for approximately eight hours. Strain through a metal mesh strainer into a sterilized glass jar with a tight fitting lid and store in the refrigerator for up to two weeks.
🍸 Lilac Gin Fizz for a Crowd (serves 8)
2 cups gin (we like Bombay Sapphire)
1 cup fresh lemon juice
¾ to 1 cup lilac simple syrup
Seltzer water (plain lets the lilac shine. We also like the LaCroix Lemoncello)
Mix the gin, lemon juice, and lilac simple syrup into a pitcher and chill until you’re ready to serve. Divide drink among tall, ice-filled cocktail or wine glasses and top with ~6oz. seltzer water.
🍋 Sparkling Lilac Lemonade for a Crowd (Non-Alcoholic)
1 1/2 cups freshly squeezed lemon juice (10-12 lemons)
1 1/2 cups lilac simple syrup
6 cups chilled seltzer water
Pour into glasses filled with ice, garnish with lemon slices.
